Cherry Coffee Cake
Heat oven to 400F
Grease 9x9x2" baking pan
1 jar (12oz) cherry preserves
1/2 cup raisins
1/4 cup brown sugar, packed
1/4 tsp. cinnamon
2 cups Bisquick baking mix
2 tbsp. granulated sugar
1 egg
3/4 cup milk
Easy Icing (below)

Easy Icing:
1/2 cup confectioners' sugar
1 tbsp. water or milk
1/4 tsp. vanilla
9 to 12 servings
Spread preserves on bottom of pan.
In small bowl, stir together raisins, brown sugar and cinnamon; set aside.
Mix remaining ingredients.
Beat vigorously 1/2 minute.
Spread batter evenly over preserves; sprinkle with brown sugar mixture.
Bake 25 to 30 minutes.
While warm, drizzle with icing.

Easy Icing:
Mix ingredients until smooth.
