=Flour, egg & bread bass in pesto crumbs. Toothpick onion rings to hold together. Make risotto. Deep-fry seabass, seperate onion into rings, place 3 rings on plate, fill with risotto & place bass on risotto. Sauce plate & serve garnish with grilled eggplant.
