1 (8-inch) graham cracker crust (pre-bake for 5-7 minutes in 350 degree oven)
1 (14-ounce) can sweetened condensed milk
1/2 cup Florida key lime juice
4 fresh Florida eggs
1 teaspoon vanilla
Servings: 8
Separate 3 of the eggs and place the whites in a large bowl and place the yolks plus the last whole egg in a smaller bowl. When egg whites become room temperature, use an electric mixer and beat until fluffy and dry, adding the vanilla when whites are almost finished. Set aside.
Beat the 3 yolks and 1 whole egg until thick approximately 2 minutes, and then add condensed milk and lime juice. Stir until the mixture becomes thick and smooth. Fold in egg whites; pour into pie crust and freeze for at least 6 hours.
Garnish with whipped cream and serve frozen.
