Hot Bacon Sauce

1 pound bacon
4 ounces all-purpose flour
20 ounces granulated sugar
1/4 cup salt
3 cups cider vinegar
3 cups water
Yield: 2 1/2 quarts
1. Dice bacon. Fry until crisp.

2. Add flour and stir until smooth.

3. Mix sugar, salt, vinegar, and water. Boil 1 minute. Add to fat-flour mixture gradually while stirring. Cook until slightly thickened.



Notes: Use to wilt lettuce or spinach; or with hot potato salad or shredded cabbage.
