1 tablespoon butter or margarine
1/4 pound mushrooms, sliced
1 tomatoes, diced
2 tablespoons basil, fresh, chopped
2 large California Fresh Eggs*
2 tablespoons Jack cheese
Servings: 1
1. Melt butter in skillet. Add sliced mushrooms and cook, stirring often until lightly browned.

2. Add tomatoes and basil and stir to heat through.

3. Cook eggs to order and add to skillet.

4. Top with grated cheese, run under broiler to melt.

5. Serve with toasted Ciabatta** bread.



Notes: **Ciabatta" means slipper in Italian. These crusty delicious loaves are a perfect accompaniment to this Brunch or Breakfast delight.

All Italian cooks know that eggs and basil are a heavenly combination just right for Sunday Brunch. No Italian kitchen can survive without fabulous eggs. Pasta works better with eggs and eggs provide the glue to keep Manicotti and Lasagna in great shape. Momma Mia ... we love those eggs!

*If using frozen or liquid whole egg: 3 1/2 ozs.
