Jelly Roll

Preheat oven to 400F
Grease a 15x10x1" jelly roll pan and line with waxed paper.
4 eggs
4 tbsp. hot milk
1 tsp. lemon juice
1 cup granulated sugar
1 cup pre-sifted Monarch soft wheat flour
1 tsp. baking powder
1/4 tsp. salt

Beat until thick and lemony, eggs and milk.
Beat in lemon juice.
Gradually add sugar.
Beat until very thick.
Blend together flour, baking powder and salt.
Sift dry ingredients over egg mixture in 4 portions, folding gently after each.
Turn into prepared pan.
Bake for 10 to 12 minutes.
Turn out immediately on towel sprinkled with icing sugar.
Remove waxed paper and roll, rolling towel up in cake.
Cool.
Unroll, fill with jam, jelly or filling and re-roll.
