1 cup + 2 tbsp whole grain pastry flour
1/8 tsp. baking soda
1/8 tsp. salt
1/2 cup sugar
4 tbsp. butter, at room temperature
1 large egg white
1 tsp. grated lemon rind
1 tbsp. lemon juice
Preheat the oven to 350F. Coat 2 large baking sheets with cookign spray.
In a medium bowl, mix the flour, baking soda and salt.
Place the sugar and butter in a large bowl. Using an electric mixer on medium speed, beat until light and fluffy. Add the egg white, lemon rind, and lemon juice. Beat well (the mixture will appear curdled).
With the mixer on low speed, gradually beat in the flour mixture.
Drop the dough by rounded teaspoons, about 1" apart, onto the prepared baking sheets.
Bake 1 sheet at a time for 8 to 10 minutes, or until the edges are lightly browned.
Cool on a rack for 2 minutes. Remove from the sheet and place on the rack to cool completely.
