1 1/2Lb(s). ground beef
6Whole saltine crackers, crushed finely
1Whole onion, grated
2Whole carrots, grated
1Whole egg
1/8tsp(s). pepper

Topping:
1Tbsp(s). soy sauce
1Tbsp(s). catsup

Combine first 7 ingredients, blend well.
Place the mixture in a 8 X 12 inch baking dish and shape into a rounded loaf about 1 1/2 inches thick.
Raise onto a small rack or saucer, overturned.
Mix Soy Sauce and catsup.
Brush meat loaf with the Soy Sauce, catsup mixture.
Place a piece of waxed paper on top of meat, microwave at high 100% for 15 to 20 minutes.
Check for doneness at the minimum time.
Let stand covered about 6 to 8 minutes before slicing.

Variations: Put sauce on meat after it comes from the oven before it sits.
Cook with the probe in center of meat till it reaches 130 ‘.
