14 oz. can peaches (drained)
1/4 cup butter or margarine, melted
1/2 cup brown sugar
1 cup Quaker Harvest Crunch cereal
1 1/3 cup all purpose flour
1/3 cup white sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 cup milk
1/4 cup vegetable oil
2 eggs
1 tsp. vanilla
8 servings
Arrange peach slices on bottom of greased 9" round cake pan.
Combine butter, sugar and cereal; sprinkle over peaches.
Stir in bowl, flour, sugar, baking powder and salt.
Add milk, oil, eggs and vanilla.
Beat until smooth.
Batter will be thick.
Spread over peaches.
Bake @ 350F for 40 to 50 minutes.
Invert pan on plate, and remove pan.
Serve with whipped cream if desired.
