Preheat the oven to 350F
Coat an 11x7" baking dish with cooking spray.
4 large pears, cored and cut into 1/2" slices
2 tbsp. maple syrup
1 tbsp. lemon juice
1 tsp. vanilla extract
1/2 tsp. ground nutmeg
1 cup old fashioned rolled oats
1/3 cup sliced almonds
1/4 cup packed light brown sugar
2 tbsp. whole grain pastry flour
2 tbsp. chilled butter, cut into small pieces
2 tbsp. canola oil
8 servings
In a large bowl, mix the pears, maple syrup, lemon juice, vanilla and nutmeg.
Place in the prepared baking dish.
In a medium bowl, combine the oats, almonds, brown sugar, flour, butter, and oil.
Mix with your fingers to form crumbs.
Sprinkle over pear mixture.
Bake for 40 minutes, or until the pears are tender and the topping is lightly browned.
Cool on rack for at least 10 minutes before serving.
