20 ounces Unsalted butter
11 ounces Powdered sugar
10 ounces Egg whites
1 tablespoon Orange zest, grated fine
1 teaspoon Vanilla extract
7 1/2 ounces Cake flour
Bittersweet chocolate, melted and tempered, as needed
Yield: 4 Dozen
1. Cream the butter and powdered sugar in a mixer bowl fitted with the paddle attachment. Gradually add the egg whites followed by the orange zest and vanilla. Fold in the flour.

2. Spread the dough into 3-inch (8-centimeter) circles on a silicone baking mat or buttered sheet pans. Bake at 425°F (216°C) until golden and the edges are lightly brown, approximately 4 to 6 minutes.

3. To roll into cigarettes, lift the cookies off the sheet pan one at a time with an offset spatula. Immediately roll each cookie around a 1/4-inch (6 millimeter) dowel. (If the cookies have cooled before the shaping process, reheat them until they are very soft, about 3 minutes, and then resume the shaping process.)

4. After cooling, dip the ends in tempered chocolate. Store in airtight containers.
