1 7 1/2-ounce can red salmon drained, boned and flaked
2 tablespoons celery minced
2 tablespoons green onions minced, including some tops
3 tablespoons mayonnaise
1/2 teaspoon lemon juice
1/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon liquid smoke
Thinly sliced cucumber
Crackers or toasted bread rounds
Thinly sliced green onions
Watercress sprigs

In a small bowl, mix salmon, celery and minced green onion. Add mayonnaise, lemon juice, salt, pepper and liquid smoke. Mix well. Cover and chill at least 1 hour to develop flavor or up to 24 hours.

Just before serving, place a cucumber slice on crackers or toast. Top with salmon mixture and garnish with green onion slices and watercress.
