5 pounds cucumbers
8 ounces onions
3 cups sour cream
3 cups mayonnaise
1 1/2 teaspoons salt
3 tablespoons granulated sugar
3/4 cup cider vinegar
Servings: 50
1. Cut cucumbers and onions in thin slices.
2. Blend rest of ingredients to form a thin cream dressing. Pour over cucumbers and onions. Mix lightly.
Yield: 4 1/2 quarts
Notes:
This cream dressing may be used as a dressing for lettuce.
VARIATIONS:
German Cucumbers. Reduce onions to 4 oz. Delete cream dressing. Pour mixture of 1 cup vinegar, 1/2 cup water, 1 Tbsp salt, and 8 oz sugar over cucumbers and onions. Marinate at least 1 hour.
