1 1/4 pounds sweet potato, diced, peeled
3 carrots, chopped
1 large celery stalk, chopped
1 bay leaf
6 cups water
2 tablespoons lemon juice
1 teaspoon Hungarian sweet paprika
Servings: 6
1. Put all vegetables with the bay leaf in a soup pot. Add water and bring to a boil. Simmer for about one hour. Stir occasionally.

2. Just before serving, add lemon juice and paprika. Remove bay leaf.
