Three Bean Salad with Balsamic vinaigrette

4 oz each of three varieties of dried beans such as lentils, great northern, turtle, ect.

1 onion, chopped
2 cloves garlic, chopped

4 yolks
1 Tbsp balsamic vinegar
24 oz oil

6 oz balsamic vinegar

=Soak beans overnight, cook separately in boiling water till done. Drain & cool.
Saute onion and garlic until soft., add to beans.
Make balsamic vinaigrette by mixing together the yolks and 1 Tbsp vinegar, then slowly whisking in oil. As mix thickens add rest of balsamic vinegar. Season to taste, add to beans.
