variation of Kernels Chicken - lower carb and hotter!

Inspired by Numbski's recipe for Kernels Chicken, I tried the following, I think it would be lower carbs as it has less bread and it is hotter due to the chilli powder.

To make it, sift well the following:

1/2 teaspoon ground coriander
1/2 teaspoon dried sage
1/2 teaspoon ground mixed spice
1/4 teaspoon onion granules
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic granules
1/8 teaspoon of hot chilli powder

3-4 whole boneless chicken breasts, cut to serving size desired.
egg whites from 1 large egg
Olive Oil (in spritzer, if available)
1 Cups dry bread crumbs
1 cup of ground walnuts

When you're ready to cook:

Preheat the oven to 425 degrees.
Pour the dry bread crumbs and ground walnuts into a bowl. In a separate bowl, put either 1 large egg white, beaten, or 1/4 cup of Egg Beaters. Spray olive oil into the bottom of a large baking dish to keep your chicken from sticking.

Mix the herbs and spices well into the bread/nut mix. One serving at a time, dip the chicken into your egg, then roll in the seasoned crumbs mixture, then place into the baking dish. Once all of your chicken is coated, lightly spritz the top of your chicken with olive oil to aid in browning.

Put the baking dish into the oven, and allow it to bake for 20 minutes. Pull the dish out, flip the chicken, and re-spritz with olive oil. Bake another 20 minutes until golden brown.

Some people might like to add a small amount of salt but I never add salt to any of my recipes.
