1 cup pitted, chopped plums
1/3 cup honey
2 tablespoons lemon juice
1 tablespoon minced onion
1/2 teaspoon grated lemon peel
1/4 teaspoon grated fresh gingerroot
1/8 teaspoon salt
1/8 teaspoon ground cloves
1/8 teaspoon ground allspice
Pepper, to taste
Servings: 6
Combine all ingredients in medium saucepan; mix well. Bring mixture to a boil over medium heat; reduce heat to low and simmer 15 minutes or until plums are completely cooked. Transfer mixture to blender or food processor; process until smooth. Press plum mixture through sieve. Adjust sweetness with additional honey, if desired. Return plum mixture to saucepan and simmer 5 minutes. Serve with duck, chicken or lamb.

Yield: 3/4 Cup
