Baking Time: 10 minutes


1/2 pound Alaska cod fillets, thawed if necessary
Salt and pepper
1 tomato, peeled and chopped
1 1/2 teaspoons green onion, chopped
1/4 teaspoon basil, crushed
AND
1/4 teaspoon oregano
1 teaspoon butter or margarine
1/4 cup shredded Monterey jack cheese
1 tablespoon grated Parmesan cheese
Servings: 2
1. Cut cod into serving-size pieces; place in buttered baking dish. Sprinkle with salt and pepper. Combine tomato, onion and seasonings; spoon over cod.

2. Dot with butter. Bake at 450ºF 8 to 10 minutes or until cod flakes easily when tested with a fork. Sprinkle with cheeses; bake until melted.
