Using about a 100 lbs. of the roasts do the following:

1) Marinated for 36 hours.

2) Then cook the roasts on a rotisserie at 250F for 12 hours using hickory for smoke. The last 45 minutes put a glaze of C.J's gourmet barbecue sauce which is fairly sweet so added a little cayenne.

Note: This is an excellent beef, very moist.
