1 cup salad or vegetable oil
1 cup chopped nuts (any kind)
2 cups sugar
2 cups diced, peeled apples
3 eggs, well beaten
3 cups flour
1 tsp. baking soda
2 tsp. vanilla
In a large bowl, combine oil, nuts, sugar, apples and eggs; mix by hand until well blended. Add flour, baking soda and vanilla; mix well. Pour into a regular sized loaf pan. Bake at 350°, 60-90 minutes.
