2 whole chicken breasts, skinned and boned 2
Marinade
1/4 cup soy sauce 60 mL
1/4 cup orange juice 60 mL
2 tbsp oil 30 mL
1/2 tsp dried, crushed red peppers 2 mL
1 clove garlic, minced 1
1/4 cup peanut butter 60 mL
2 tbsp onion, finely chopped 30 mL
1 tsp ground coriander 5 mL
1 tsp ground tumeric 5 mL
1/2 tsp ground ginger 2 mL
Cut chicken into 1-in/2-cm pieces.
Combine marinade ingredients and mix well.
Add chicken pieces and marinate 4 hours.
Place chicken on skewers and grill until chicken is done, about 10 minutes. Turn 2 or 3 times.
Serve over a bed of rice, with vegetables.
