1/2 ounce Active dry yeast
10 fluid ounces Water, warm
1 ounce Granulated sugar
4 fluid ounces Olive oil
2 teaspoons Salt
18 ounces Bread flour
Egg wash, as needed
3 tablespoons Sesame seeds
Yield: 24 Breadsticks
1. Stir the yeast, water and sugar together in a mixer bowl.
2. Blend in the oil, salt and 8 ounces (240 grams) of the flour.
3. Gradually add the remaining flour. Knead the dough until it is smooth and cleans the sides of the bowl, approximately 5 minutes.
4. Remove the dough from the bowl and allow it to rest for a few minutes. Roll the dough into a rectangle, about 1/4 inch (6 millimeters) thick.
5. Cut the dough into 24 even pieces. Roll each piece into a rope and twist; bring the ends together, allowing the sides to curl together. Place on a paper-lined sheet pan.
6. Brush with egg wash and top with sesame seeds. Let the sticks rise until doubled, approximately 20 minutes.
7. Bake at 375°F (190°C) until golden brown, approximately 12 to 15 minutes.
Notes: Method: Straight dough
Fermentation: 20 to 30 minutes
Variations:
Garlic Breadsticks -- Knead 1 ounce (30 grams/5%) grated Parmesan and 1 ounce (2 tablespoons/30 grams/7%) minced garlic into the dough.
Herbed Breadsticks -- Knead 0.3 ounce (3 tablespoons/9 grams/2%) chopped fresh herbs such as basil, parsley, dill and oregano into the dough.
