Preheat oven to 325F
Grease a 9" pie plate.
2 egg whites
1/4 tsp. cream of tartar
2/3 cup granulated sugar
1/2 tsp. vanilla
2/3 cup flaked coconut
1/4 cup sifted icing sugar
Beat egg whites and cream of tartar to form stiff but moist peaks.
Gradually beat in sugar.
Blend in vanilla.
Combine and fold in coconut and icing sugar.
Spread on bottom and sides of prepared pie plate.
Bake for 30 minutes or until firm and dry.
Cool and fill with cooked fruit filling, cream filling or ice cream.
