Cucumber Sauce

1 pound cucumbers
1 cup sour cream
1 tablespoon grated onion
1 tablespoon cider vinegar
1 1/2 tablespoons lemon juice
1/2 teaspoon salt
few grains cayenne pepper
Yield: 3 cups
1. Peel cucumbers; remove seeds. Grate or chop finely.

2. Combine remaining ingredients and add to cucumber. Chill



Notes: Potentially hazardous food. Store for service at an internal temperature below 41°F.

Serve with fish.
