4 tb Butter 1/4 ts Pepper
3 ea Medium potatoes, peel, slice 2 ea Small, tart, apples, sliced
1 ts Salt 1 tb Lemon juice
1 ts Poppy seed 1 ts Cinnamon (optional)

preheat oven to 425 deg f. Melt butter in oven in a shallow 2 quart baking
dish. Add salt, poppy seeds and pepper. Place potatoes (sliced 1/8" thick)
in dish and toss to coat with butter. Bake 30 minutes, tossing twice
during baking. Meanwhile, toss apple slices (slice apples 1/4" thick) in
lemon juice and set aside. Add apples to potatoes and toss to mix. Bake
for 10 minutes or until apples are tender. Serve hot. Dust with cinnamon,
if desired and sprinkle with chopped parsley. Serve as a side dish with
pork chops or chicken. Makes 4 servings.
