1/2 cup milk
1 large egg
3 tablespoons butter or margarine, cut up
3/4 teaspoon salt
2 1/3 cups bread flour
2 tablespoons sugar
1/2 teaspoon finely shredded lemon peel
1/8 teaspoon ground nutmeg
1 1/2 teaspoons Fleischmann's® Bread Machine Yeast
1/3 cup dried currants or dark raisins
3 tablespoons finely chopped dried or candied pineapple
1 white of large egg
1 tablespoon water
Icing

ICING
1/2 cup sifted powdered sugar
1/4 teaspoon pure vanilla extract
1 teaspoon milk (1 to 3 teaspoons)

1. Add milk, egg, butter, salt, bread flour, sugar, lemon peel, nutmeg, and yeast to bread machine pan in the order suggested by manufacturer. Select dough/manual cycle. When cycle is complete, remove dough from machine to a lightly floured surface. Knead in currants, pineapple, plus enough flour (if necessary) to make dough easy to handle. If dough is too elastic, cover and let rest 10 minutes before shaping.

2. Divide dough into 9 equal pieces; form each piece into a smooth ball. Place on large greased baking sheet. Cover; let rise in a warm, draft-free place until almost doubled in size, 15 to 20 minutes. With sharp knife, cut a shallow cross in the top of each bun. Lightly beat egg white and water; brush over tops of buns. Bake at 375ºF for 15 to 18 minutes or until done. Remove from sheet; cool on a wire rack. Place Icing in pastry bag with small round tip. Pipe a cross of Icing on top of each bun. (Or drizzle buns with Icing.)

Icing: Mix powdered sugar, vanilla extract, and enough milk to make icing of piping consistency.

Yield: 9 Buns

Notes: Creating Golden Brown Breads: You can easily give your shaped breads a golden, glossy top by brushing them with a mixture of egg and water or sugar before baking. Choose an egg yolk and water mixture when you want the baked bread to be a rich golden brown like the Challah. To give breads such as Hot Cross Buns a glossy top, brush an egg white and water mixture over them. Brushing an egg and sugar mixture on breads such as Holiday Dinner Rolls gives a golden brown top and adds a touch of sweetness.
