Sweet butterscotch and spiced rum will warm and relax you. Great after a day of outdoor winter activities.
2/3 cup butter (not margarine), softened
1 1/2 cups brown sugar, packed
1 cup icing (confectioners) sugar
2 cups vanilla ice cream, softened
1 cup spiced rum
6 cups boiling water
Serves 8
Beat butter in large bowl until smooth.
Add brown sugar and icing sugar.
Beat until thick and creamy.
Add ice cream.
Stir until well combined.
Makes about 4 cups ice cream mixture.
Transfer to plastic container with tight fitting lid.
Freeze for at least 6 hours until firm.
Scoop about 1/2 cup ice cream mixture into each of 8 large mugs.
Add 2 tbsp. rum and 3/4 cup boiling water to each.
Stir.
