Recipe Feeder
1 lb Lean ground beef 1 c Pitted black olives, sliced
2 tb Chili powder 4 oz Can chopped green chilies,
1 c Mild taco sauce -drained
1 c Grated Monterey Jack 1/2 ts Salt
1 c Tortilla chips 12 oz Can whole kernel corn,
1/2 c Sour cream -drained
1/4 c Sliced scallions 1 Large tomato, chopped
4 servings
Heat oven 400 degrees. In 10-inch skillet over medium high heat, cook
ground beef about 5 minutes until well browned. Stir in chili powder, cook
1 minute. Remove from heat, stir in taco sauce, green chilies and salt. In
small bowl combine corn and half scallions. In 1 1/2 qt casserole layer
half corn mixture, half beef mixture, half olives and half cheese. Repeat
layering. Bake, covered 20 minutes until heated through cheese is melted.
Garnish with tortilla chips, sour cream, tomato ad remaining scallions to
serve. Makes 4 serving.
