2 tomatillos, no hull or skin
3 large garlic cloves
2 plum tomatoes, finely chopped
3 plum tomatoes, coarsely chopped
3 jalapeño peppers, thinly sliced
1/4 cup fresh cilantro, coarsely chopped
1 tablespoon fresh lemon juice
1 teaspoon black pepper, freshly ground
Servings: 6
Place tomatillos and garlic in food processor bowl fitted with steel blade or blender container; cover and process until finely chopped. Combine tomatillo mixture, tomatoes,jalapeño peppers, cilantro, lemon juice and pepper. Cover and refrigerate 1 hour (or overnight, if desired) to blend flavors.
