1 cup white pea beans, soaked and cooked
OR
1 cup canned white pea beans, drained and rinsed
1/2 red onion, finely chopped
4 cloves garlic, minced
1/2 small red pepper, finely chopped
1/2 small green pepper, finely chopped
1 small jalapeño pepper, finely chopped
2 plum tomatoes, seeded and diced
2 tablespoons fresh parsley, chopped
2 tablespoons fresh coriander, chopped
3 tablespoons olive oil
Juice of half a lime
Salt and pepper, to taste
Servings: 8
In a glass or plastic mixing bowl, combine all ingredients and season to taste. Refrigerate for at least one hour before use. Serve at room temperature.
