Ok so its not a revolutionary recipe but it certainly makes a tasty (and very easy to make) pasta dish !!!

This makes enough for 3 - 4 meals dependent on your calorie intake amounts.

3 cups brown pasta
1 red pepper (bell pepper)
1 green pepper (bell pepper)
2 courgettes (zucchini)
1 onion (large)
1 bulb ( yes bulb not clove) of garlic
1/2 head of broccoli
2 chorizo sausages (optional but highly recommended)
1 - 2 tins of chopped tomatoes
Splash of olive oil

Get yourself a large roasting tin and set the oven to about 200 degrees centigrade (392 farenheit).

Roughly chop the peppers / onion / zucchini and broccoli and toss into the roasting tin.

Slice the 2 chorizo sausages and toss into the pan (if you are including them - I would !!)

Break the garlic bulb into individual cloves and throw then into the tin (don't peel the skins off the cloves, leave them on).

Finally drizzle on a bit of olive oil about 2 - 3 spoonfuls at most.

Mix up all the contents in the roasting tin and bung it in the oven (for about 45 mins ish). MIx around the veggies every 10 mins to ensure even cooking.

After the veggies and sausage have cooked for about 25 - 30 mins, shove the 3 cups of pasta into some boiling water for about 12 -15 mins.

When the pasta has cooked, drain it and bung in a can or two of chopped tomatoes (deoending on how much sauce you want in your dish).

After the veggies have roasted for 45 mins etc take them out of the oven. You will need to hunt round for the garlic cloves and split them out of their roasted skins, throw away the skins and try to break the roasted cloves up a bit around the roasting tin to mix in the roasted garlic flavour.

Chuck in the pasta with chopped tomatoes and mix around with the veg.

Plate up a medium sized amount and enjoy, you can add some parmesan cheese to intesify the favours if you wish.
