Serves 8

4 c.(16 oz.)shredded Monterey Jack cheese
4 pickled jalapeno peppers,finely chopped
2 green onions,chopped
2 Tbls.minced fresh cilantro
1 tsp.ground cumin
2 Tbls.butter,softened
8(7")flour tortillas


Combine first 5 ingredients,stir well.Set aside.

Spread butter evenly on 1 side of each tortilla.Spoon cheese mixture evenly over unbuttered side of 4 tortillas,top with remaining 4 tortillas,buttered side up.

Cook quesidillas 1 at a time,in a large skillet over medium high heat 2 minutes on each side or till lightly browned.To serve,cut tortillas in half.Serve with shredded lettuce,chopped tomatoes,sour cream,black olives,extra jalapenos & salsa verde.YUM!
