Recipe Feeder
1 1/2 lb cod fillets, fresh or frozen 700 g
1/4 lb fat salt pork 100 g
1/2 cup finely chopped onion 125 mL
1/2 cup diced celery 125 mL
1 chicken bouillon cube 1
2 cups hot water 500 mL
2 cups diced raw potatoes 500 mL
1 tsp salt 5 mL
1/8 tsp white pepper 0.5 mL
1/4 tsp dried thyme 1 mL
2 cups milk 500 mL
Cut each fillet into 3 or 4 pieces.
Dice salt pork into 1/2 in/1 cm cubes. Fry in large saucepan until crisp and brown. Remove and drain cubes on paper towels. Add onion and celery to drippings. Cook for 5 minutes, stirring frequently.
Dissolve bouillon cube in hot water. Stir into vegetables. Add fish, potatoes and seasonings. Cover; simmer 8 to 10 minutes, or until fish is milky white.
Add milk. Heat gently for a few minutes to blend flavors. Garnish with pork cubes if desired.
