Recipe Feeder
1 cup prepared quinoa
1 4oz portion of meat cut up (salmon, chicken, pork)
1/2 cup soybeans (shelled edamame)
1 tbls soy sauce
1 tbls oil
one egg, scrambled
*optional - cut cooked mixed veggies? - i'm sticking to more protein though.

Okay...sometimes you just want this stuff, and we can't eat rice...so this is *MY* attempt at "healthifying" a bad dish.

Prepare some quinoa and put the left overs in the fridge overnight.

Next day, crumble up the salmon/whatever meat you choose, and get the soybeans ready. heat a non stick skillet or wok, and add the oil, heat till smoking. throw in the quinoa (min already had diced onions in it from preparing it the day before...if you like you could saute some onions now as well) and the meat and beans. STIR LIKE MAD!

Once it is all heated thru, drizzle the egg on and stir some more...the goal is to get them little eggy bits everywhere. finish with a drizzle of soy sauce and serve hot.

this is a fantastic way to use up leftover quinoa, and with considerably better macronutrients than "the other stuff"
