1 and 1/2 cup self-rising flour, 2 cups very soft vanilla ice cream (not diet), 1/2 cup semi-sweet chocolate bits, 1/2 cup chopped nuts (optional). Measure flour and ice cream into bowl. Mix only until dry ingredients are moistened. Fill well greased muffin cups 3/4 full.(Stir in clocolate bits and/or nuts. Bake until golden brown. Bake at 425F for 20-25 min. Makes 8 muffins.:chef:
