1 (16.9-ounce) package Mrs. T's Frozen Potato and Onion or Potato and Cheddar Cheese Pierogies
1 (9-ounce) package frozen cut green beans
1 (15 1/4-ounce) can red kidney beans, drained and rinsed
1 (7-ounce) can Mexicali corn, drained
1/2 cup sliced green onions (scallions)
1/2 cup prepared red wine vinaigrette
OR
1/2 cup Italian salad dressing
Servings: 8
In a medium saucepan, cook pierogies and green beans in boiling water until pierogies are thawed, 3 to 5 minutes. Drain and transfer to a large bowl. Add kidney beans, corn, green onions and vinaigrette. Toss gently until well coated. Cover and refrigerate at least 20 minutes.
Yield: 8 cups
