2 cups chopped or ground leftover turkey
1/2 cup mayonnaise
2 tablespoons parsley, chopped
1/2 teaspoon salt
1/8 teaspoon pepper
8 slices bread
3 eggs, beaten
1 1/2 cups milk
1/4 teaspoon salt
1/4 teaspoon poultry seasoning
Servings: 6
1. Combine turkey, mayonnaise, parsley, 1/2 teaspoon salt and pepper.
2. Place 4 slices of bread on a greased 9 inch square baking pan. Spread turkey mixture over bread and top with additional 4 slices of bread.
3. Combine eggs, milk, 1/4 teaspoon salt and poultry seasoning. Pour over sandwiches and let stand in refrigerator for at least one hour. Bake at 350 Deg. for 45-50 minutes. Let stand for five minutes, then slice into six servings.
