Garnish with sliced almonds just before baking. Uses leftover turkey.
1 1/2 cups chopped onion
8 bacon slices, diced
2 tbsp. all purpose flour
1 tbsp. curry powder, or to taste
1 cup water
1/4 cup orange marmalade (or apricot jam)
2 tbsp. ketchup
1 1/2 tbsp. white vinegar
2 tsp. beef bouillon powder
1/2 tsp. salt
1/2 tsp. pepper
4 cups leftover cooked turkey chunks
Serves 6
Fry onion and bacon in frying pan until onion is soft and bacon is cooked.
Mix in flour and curry powder.
Add water.
Stir until it boils and thickens.
Add marmalade, ketchup, vinegar, bouillon powder, salt and pepper.
Stir.
Place turkey in ungreased 3 quart casserole.
Pour onion mixture over top.
Bake, uncovered, in 350F oven for 30 to 40 minutes until hot and bubbly.
