1 ½ lb boneless pork, trimmed and cut into 1 ½” chunks (I used pork loin and 1 lb)
½ tsp salt ( I omitted this and oil)
1 tsp canola oil
1 (14 ½ oz) can low sodium chicken broth
1 (14 ½ oz) can diced tomatoes
1 large onion chopped
3 garlic cloves minced
2 Tbsp chipotle chile powder
1 tsp oregano
1 tsp cumin
1 tsp coriander
1 (15 oz) can hominy, rinsed and drained

-Sprinkle pork with salt. Heat oil in non stick pan over med-high heat. Cook pork in batches if need be until browned, about 5 min. Transfer to 5-6 quart slow cooker.
- Stir broth, tomatoes, onion, garlic, spices into slow cooker. Top with hominy.
-Cover and cook until fork tender, 4-5 hrs on high or 8-10 on low.

Per serving: (3/4 cup) 236 cal, 12 g fat, 4 g sat fat, 3 g fiber
