6# Lump Crab Meat

2.5 # Chopped Yellow Onion
1/8 Cup Salt
1/8 Cup White Pepper
1/8 Cup Sugar
5 cups Apple Cider Vinegar
5 Cups Canola Oil
Mix spices together with oil and vinegar.
In a pan, layer crab meat down first, place onions on top of crab, pour oil/vinegar/spice mixture over top.
Place a sheet of saran wrap over the top and press down tight.
Allow to sit in fridge at least 24 hours. Remove and stir up.
This is obviously a large recipe and can be cut down compared to how many people you are feeding. The layering process is very important, as is the marinating process.
