Recipe Feeder

4 c fresh sauerkraut (can used canned)
1 large onion, slice very thin
1 tart apple, sliced (any apple will do)
4 strips bacon cut into 1 inch pieces (omit, or use ham, Canadian bacon, or turkey bacon for points)
1 t sugar (no points per serving)
1 bay leaf
3-4 pounds pork loin
1/2 t salt
1/4 t freshly ground pepper

Slow cooker directions:
Brown the pork loin in a healthy oil (optional but I prefer this).
Place the pork in the slow cooker.
Combine all other ingredients and place on top of roast.
Cook on high for 1 hour and then 5-6 hours on low.
(Toward the end, if the apples and onions are on top and don't look cooked, mix them in.)


Pressure cooker directions:
Instructions are the same, except cook on high pressure for 10 minutes.


When finished I just break up/shred the pork in the slow cooker/pressure cooker and mix it all together. You could remove it and slice it.

You can vary this recipe to your liking. The apples are a GREAT addition to this dish!
