You can use almost any other fresh fruit such as fresh strawberries, or canned pears, instead of peaches for this dessert.

1 lb. ricotta cheese
1 egg yolk
3 tbsp. amaretto or white creme de menthe (or orange juice)
4 tsp. granulated sugar
2 cups sliced peaches (fresh, canned, frozen, or thawed)
1 tbsp. toasted slivered almonds

In a mixing bowl, beat ricotta until smooth. Add egg yolk, liqueur and sugar; mix well. Chill until serving time.

Recipe can be prepared ahead to this point. If using fresh peaches, toss with lemon juice and chill.

Place a few peach slices in each parfait glass. Toss with a generous spoonful of ricotta mixture. Continue with fruit and ricotta, alternating layers. Sprinkle with almonds.

Makes 4 servings.
