Pork Tenderloin Stir-Fry

1 pound pork tenderloin
1 tablespoon vegetable oil
1/2 teaspoon salt
1 small onion, sliced, separated into rings
3 small zucchini, cut into thin slices
1 medium green pepper, cut into thin strips
3 medium carrots, cut into thin slices
1 tablespoon soy sauce
1 clove garlic, minced
Servings: 4
1. Cut pork tenderloin into 1/4-inch thick slices. Quickly brown pork slices, one-half at a time, in hot oil in a wok or large skillet, stirring constantly. Remove from wok.

2. Sprinkle pork with salt. Reduce heat; add onion, zucchini, green pepper, carrots, soy sauce and garlic; mix well. Cook over medium heat 5-6 minutes, stirring occasionally. Return pork to wok and heat thoroughly.
