Recipe Feeder
You'll need (yields 6 servings):
1/4 cup frozen peas
1/2 large red onion, diced
1 medium carrot, peeled and diced
1 plum tomato, cored and chopped
2 jalapenos, deseeded and diced
1/8 cup yellow split peas (if you don't have a 1/8 cup, just eyeball it. It's NOT much!)
2 cloves garlic, chopped
1/4 tsp grated ginger
1 1/2 cups cracked wheat
3 cups water
1 tsp olive oil
1 tsp yellow mustard seeds
1/2 tsp cumin seeds
Garam masala to taste
Chili powder to taste
Crushed red chilis to taste
Optional (yields 2 servings):
8 oz chicken breast, boneless and skinless
1/2 lemon
1/4 cup chopped cilantro
To make the upma with cracked wheat, heat the mustard seeds and cumin seeds in olive oil with the chopped garlic. Do this until the seeds become fragrant or the mustard seeds start to pop around. Add the onion and jalapeno and saute over medium heat for a few minutes. Add the carrot, peas, tomato, ginger, and yellow split peas and cook the vegetables until tender, stirring constantly.
Add the 3 cups of water and bring to a boil.
Once upma is boiling add the cracked wheat, stirring to avoid lumps. Reduce heat, cover, and simmer until the cracked wheat absorbs the water completely. This only takes a few minutes so don't run off.
Season to taste with garam masala, red chili powder, and crushed red pepper...or whatever floats your boat. This recipe has no salt in it at all resulting in upma that is a bit bland. I did it this way deliberately so it could be seasoned in pretty much any way imaginable. Not everyone likes Indian spices!
