4 Freestone peaches
or nectarines
1 Lemon
1 Vanilla Bean
2 ounces Granulated sugar
2 ounces Unsalted butter

1. Cut the peaches or the nectarines in half. Remove the pits. Place them, cut side up in a well-buttered half hotel pan or an ovenproof dish.
2. Split the vanilla bean and scrape the seeds into the sugar. Sprinkle the fruit with the sugar and lemon juice.
3. Place a small piece of the butter in the center of each halves fruit and bake at 350°F (1°C) until tender and lightly browned, for approximately 20 minutes. Serve warm with ice cream or custard.
