Herb Marinade for Poultry or Fish

3/4 cup white wine
1 1/2 cups lemon juice, fresh squeezed
2 ounces garlic cloves, minced
2 ounces parsley, minced
1/4 cup dijon mustard
2 tablespoons red pepper flakes
1 tablespoon fennel seeds, crushed
1 tablespoon dried tarragon leaves
1 teaspoon salt
Servings: 50
1. Combine all ingredients.

2. Rub on both sides of chicken or fish portions.

3. Marinate in refrigerator for 30 minutes.

4. Follow recipe instructions for grilling, broiling, or roasting.
