12 pounds ground beef (AP)
5 ounces eggs (about 3 total), beaten
2 cups milk
4 ounces soft bread crumbs
4 ounces onion, chopped
2 tablespoons salt
2 teaspoons black pepper
50 hamburger buns
Servings: 50
1. Place meat in mixer bowl.

2. Combine eggs and milk and add to meat.

3. Add crumbs and seasonings. Blend on low speed for approximately 1 minute, using flat beater.

4. Portion meat mixture with No. 10 dipper onto lightly greased baking sheets. Flatten into patties. Bake at 400°F for 15-20 minutes or until internal temperature reaches 155°F.

5. Serve patties on warm buns.

6. Cook according to directions. Drain. Serve 6 oz shrimp over 4 oz cooked pasta

1/2 oz (1/4 cup) dehydrated onions, rehydrated in 1/2 cup water, may be substituted for fresh onions

VARIATIONS:

Barbecued Hamburgers. Place browned hamburgers in baking pans. Pour Barbecue Sauce over patties. Cover with aluminum foil and bake at 325°F until hot, about 10-20 minutes.

Grilled Hamburgers and Accompaniments. Cook 4-oz hamburger patties on the grill only until they are no longer pink. Place on bun and serve with accompaniments: mayonnaise, mustard, catsup, sliced dill pickles, sliced or chopped onions, sliced tomato, and leaf lettuce.
