2 Tbsp parsley - minced
3 Tbsp horseradish - prepared, drained
0.5 tsp salt
0.25 tsp pepper
2 oz mayonnaise

20 oz tenderloin - well seared
=Make croutons from bread, 4 per slice.
Mince 1.5 apples, toss with 1 Tbsp lemon juice. Quarter & slice rest of apple, 96 slices @ 0.25 inch thick each, toss with rest of lemon juice. Slice tenderloin, cut each slice into 6 (8?) pie wedges. Combine 3.
Assemble: crouton, apple slice, apple salad, tenderloin.
Can be garnished with watercress leaf.
