Easy Recipe Finder

Recipe Feeder
I made this for dinner tonight to serve with grilled scallops. I tasted it while it was still a little warm and it was so good! Can't wait to try it cold.

Tropical Couscous

serves 8

2 1/4 cups fresh orange juice ( I used frozen)
1 tsp cumin
1 10 0z box couscous (I used whole wheat)
2 TBS olive oil
2 TBS soy sauce
2 TBS lime juice
1/4 cup chopped cilantro ( I used parsley, kids hate cilantro)
2 TBS chopped basil
2 TBS chopped chives ( I used green onions)
1 tsp grated ginger
1 mango, pitted, peeled and chopped( I used frozen chunks, chopped)
1 orange peeled and chopped
1/4 cup pine nuts ( I didn't have these)

1. Add orange juice and cumin to a saucepan; bring to a boil.
2. Add in couscous; cover
3. Remove from heat and let stand foe 5 mins.
4. Fluff couscous; transfer to a bowl to cool.
5. In a small bowl, mix together oil, soy sauce, lime juice, and ginger.
6. Stir into couscous.
7. Add in the cilantro, basil, chives, mango and orange; toss to combine.
8. Sprinkle with pine nuts.
