Ingredients:
2 large portabella mushroom caps (no stems)
1/2 cup shredded mozzarella
4 Tbs. pizza sauce (or roasted red pepper paste).
4 tbsp chopped veggies such as onion, green pepper, broccoli, etc.

Preparation:

Wash mushroom caps and let dry. Cut slits in the top of the caps.
Spray mushroom caps and heating tray with olive oil cooking spray or line pan with tin foil.

Directions:
1. Preheat the oven to 400 degrees F. Place pan into oven to preheat also.

2. Place the mushroom on a pre-heated baking sheet, and bake for 7 minutes in the preheated oven. Remove from the oven, dump excess moisture (if any) off of mushroom caps and spread pizza sauce in the cup of the caps. Add veggies and seasonings, and any optional toppings. Sprinkle cheese on top.

3. Bake for an additional 20 minutes, or until cheese is melted and golden OR broil for 3-4 minutes until cheese is bubbling and browning. If baking then use a tin foil tent to melt cheese and remove tent the last five minutes.
